Hi there or might I say "Servus"!
I live in deepest Bavaria, near the Alps. I'm a Brit expat influenced by Jamie Oliver and Hugh's stuff. I have these 80 year old apple trees in my garden which according to my local "Gartenbauverein" were orderd to be planted by The Führer himself back in the day when my house was built. nI love these trees - May blossom, autumn apples, full of bees too. It was one of the features of the house - two old apple trees which made me want this place.
Every year I harvest the apples, which are known as St James Apples as they come very early, and borrow a mill and press the juice and bottle up the juice. Last year's harvest sadly is still sitting undrank in the cellar as it was too acidic. How might I go about turning this into far more useful CIDER?
