			<description>&#60;p&#62;I got a worried phone call from an amateur cider maker the other day (they found me through my website). They had made 30 litres of cider. It had fermented well and they racked it off to get rid of the 'lees'.   Of course you lose a bit of the cider when you do this, so that the 30 litres containers they used were no longer quite full. They were aware that from this stage of the process on cider must be kept away from air. My advice was to add some water (only 2 litres per 30) to ensure there was no bubble of air at the top of the container. This may weaken the cider slighty, but that's better than losing the lot to acetification. Indeed cider lore has it that a small amount of water added to cider may help it keep. So there you go Water is better than air! keep though bungs in tight! &#60;/p&#62;

			<description>&#60;p&#62;I have done 3 batches of cider 1 with green apples in oct, this 1 was burping well and is now burping very slow and looks a lovely golden colour I don't know how to test it to see if it's ready also the bung has gone in really deep and I don't know how to get it out :(&#60;/p&#62;
&#60;p&#62;2nd cider is a bramley apple cider this 1 was in nov along with the 3rd which is a mix of bramley and a apple I don't know (it's a tree with no name ) now these ones didn't burp like the 1st one did well they don't really burp at all, I thought they were cold so I put them in a warmer place and still not much happening.&#60;/p&#62;
&#60;p&#62;I realised I added yeast to the bramley to early so I have added some more yeast to it in the bucket and will put that in demi john today to see it it burps &#60;/p&#62;
&#60;p&#62;I looked at the mixed apple one today and the fluid in the burper thing in the bung has swapped over to the other side??? what's going on ? are the 2 ciders in nov O.K or do you think there dead?

			<description>&#60;p&#62;We are artisan craft cider-makers based in Hucknall, Nottinghamshire and uniquely make ciders using Nottinghamshire-grown apples *only*. &#34;We&#34; are a husband and wife team who spend quite a bit of time travelling the UK to visit cider-makers, large and small. We have been making cider for many years but only started to sell our ciders after being talked into it at a CAMRA festival (we are also long-standing CAMRA members) and of course after sorting out the legal formalities. We have so far won 5 &#34;CAMRA Cider of the Festival&#34; awards.&#60;br /&#62;
We source all of our fruit from inside the county-boundaries of Nottinghamshire, much of the fruit we use we grow ourselves in our garden or small orchard; we have recently planted a further 36 cider-apple varieties and are planting a further 50+ cider-apple varieties this coming 2010 / 2011 winter (the latter are already heeled in and acclimatising, awaiting planting out). We also use fruit collected from other apple-growers and small-holders in Nottinghamshire, as well as wildings and crabs we find growing along the highways and byways of the county.&#60;br /&#62;
We do not try to copy or ape ciders made in other parts of the UK; our aim is to produce the best clean-tasting ciders we can from locally-grown fruit.

&#60;p&#62;I have just received an email regarding a apple tree nursery clearance in Somerset. The owners are looking to get rid of a lot of their nursery apple trees. If you collect they are charging £5 per tree to cover costs. This is very cheap for trees of this age. If you are interested give Tessa a ring (see copy and paste of email below). They have a number of cider varieties.&#60;/p&#62;
